PERSONALITY: The wine elixir
STYLE: Well balanced, spicy and smooth
TASTING NOTES: Deep ruby red with mineral and small fruits notes followed by mature fruit andlight hints of toastwith a slightly spicy finish. Full bodied, warm and round, extremely elegant and well balanced. It has non-aggressive tannins and good acidity, an excellent intense finish.
FOOD PAIRING: Beef fillet, medium-aged cheeses
SHELF-LIFE: 7 to 10 years



VARIETAL: 100% Merlot
VINEYARD: Moci and S. Piero
YEAR VINEYARD PLANTED: between 1990 and 1997
TRAINING SYSTEM: Spurred cordon
VINIFICATION: Grapes are harvested by hand after a bunch selection in the vineyard. Stems are removed and grapes are soft pressed; maceration and the beginningof spontaneous alcoholic fermentation takes place in conical wooden tanks of 53 Hl at a maximum temperature of 28°C, for about 25 days.
MATURING AND AGEING: The wine spends 12/14 months in oak French barrels and then aged for about 12 months in bottles.
