THE LEGEND OF BORGAIO

There are many legend around the name of Borgaio, probably was used for a wine produced outside of the Castle wall. This Wine was the most used in rural festivals while being loved and appreciated by the Nobles who used to share with the guests in the convivial moments.

But in our land, it tells its story of a merchant in a day early autumn came to Gaiole in Chianti. He was tired, hungry and sad when he came across a group of tenants who received him. It is said that it was thanks to grapes of our vineyards that the merchant himself smile. Or maybe it was because of the evening he spent with the tenants celebrating the harvest in the streets of the village. However, things went the legend says that the merchant drove off the next day with the horse loaded with jars of wine and joy in my heart thanking vociferously that gay village who had returned happiness.







VARIETAL: Mostly Sangiovese, Merlot
VINEYARD: Fonti and Meleto (Sangiovese), San Piero (Merlot) between 360 and 380 meters above sea level.
YEAR VINEYARD PLANTED: Between 1974 and 1997
VINES PER HECTARE: 3,000/5,000
YIELD PER HECTARE: 5/6.5 tons
TRAINING METHOD: Spurred cordon and Guyot
VINIFICATION: Stalks are removed and grapes are soft pressed: the must obtained is left to ferment spontaneously in stainless steel tanks at a controlled temperature of 25°C. After the alcoholic fermentation, the wine remains in contact with the skins for period of 15 to 20 days before it is transferred into cement vats to achieve the initiation and development ofmalolactic fermentation.
AGEING: The ageing process takes place in stainless steel tanks; only part is aged in barriques of second and third passage for about 10-12 months
